Mountain cheese made in Gsies

The "Waldsamerhof" - farm and teaching dairy

About 10 walk minutes distant from the hotel, it is the farm and cheese dairy "Waldsamerhof". Sepp Huber, the farmer and also responsible for the cheese production, is not only famous for his cheese creations in the valley, but also in the whole region because the Waldsamerhof is the smallest show dairy in South Tyrol. The milk which he uses, is of course the milk from the surrounding farmers and his own. We visited Sepp, in order to see how he makes his cheese and in the following photos you can see some of the steps which are necessary, to make some tasty mountain cheese.
